Quick and easy healthy greek salad with orzo pasta

Back again with another healthy recipe, for those of you on slimming world this would be half a SYN per portion and about half of your HEA depending on the amount of cheese you use.

This recipe is for greek salad with orzo pasta . . .

If you are anything like me when you are hungry the last thing you want is a salad, because I don’t find a salad fills me, but with the added pasta it helps to fill you. This salad can be made with any pasta, but with the orzo it’s quick and I found you use more veg with it. It always reminds me of being on holiday in Greece last year, so adds a little bit of sunshine on a dull cold day. It’s not too heavy because the pasta is small and the flavours are fresh.

What you will need . . .

– 2 cups of orzo pasta
– cucumber
– red onion
– cherry tomatoes
– pitted black olives
– feta cheese
– 1 tsp olive oil
– salt and pepper
– dried oregano

What you need to do . . .

1. Boil and cook the pasta, takes about 8-10 minutes
2. Cut up the cucumber into chunks, the red onion into small pieces, the olives in half and the cherry tomatoes into quarters and add to a bowl
3. Once the pasta is ready drain it and fun it under cold water to cool
4. Once cooled add to the bowl of vegetables, season with salt and pepper, add a good pinch of oregano and the olive oil
5. Crumble in whatever amount of feta cheese you want (don’t forget slimming worlders 28g per serving for your HEA)
6. Mix together until everything is incorporated and taste, add more seasoning and oregano if you wish

Once made you can eat it straight away or put away in an air tight tub in the fridge.

Once you have mastered this you can add any other flavours or veg you want. Hope you enjoy!

      Awh no problem, I have another recipe using it the nigella with a twist post. We never really got it here before Nigella showed it on her tv show and book, well not that I seen anyway. I love it, especially instead of using risotto rice, it’s so much quicker!!!
