Mum’s homemade banana bread recipe

Today’s blog is inspired by my friend Maria who tried this bread last March and only now am I getting the recipe to her, and my mum as the recipe is hers. Mum used to bake something for us every week when we were wee, may it have been cakes, tray bakes, fruit loaf, homemade desserts and of course this banana bread. Mum would usually make this as a loaf in a loaf tin but I was lazy today, couldn’t be bothered finding the tin, and greasing and lining it. On the plus side I got to use the mini disposable loaf cases I bought ages ago.

What you will need . . .
– 4oz of butter or margarine
– 4oz of light muscovado sugar
– 3 large eggs
– 3 medium bananas mashed
– 6oz self raising flour
– 1oz desiccated coconut
– 2tbsp milk

What you need to do . . .
1. Set the oven to 180oC and line a 2lb loaf tin with grease proof paper, or set out eight small loaf cases on a baking sheet.
2. Cream together the butter and sugar.
3. Beat in the eggs
4. Beat in the mashed bananas

5. Fold in the flour and coconut.
6. Mix in the milk until it forms a soft dripping consistency.

7. Place in the loaf tin, level out and bake for about an hour until firm and golden. In the small cases cook for about 20 mins.

8. Test to see if it/they are ready by inserting a tooth pick or metal skewer, if it comes out clean that means it’s ready. Then place on a wire rack to cool.


The bread is nice served plain or with a little butter spread on it. Hope you like it.
