Crazy, busy times!!!

As you may have noticed I’ve been a bit quiet over the last couple of days.  Spent the weekend trying to relax and enjoy the sun.

Today is the start of a crazy week, work is wrapping up and I’ve a million and one things to do including reviews and reports. We took a quick break today though for a final group lunch before an afternoon of meetings and after a busy morning.

We headed to Green’s Pizzeria at Ballyhackamore, the lunch meal deal worked out at like £7.50 and was lush,  I will definitely be back!!

And tonight I’m starting on the wedding favours for one of my best friend’s wedding on Friday!

Sweet treats

As always when we head up to Moira and to see my little niece Mum and I always have to call into McCartney’s!   Today we picked up these yummy sweet treats!

Petit fours and a mini chocolate gateau!

And of course with the cute logo and sticker! As per usual the mini treats were mouthwatering and just hit the spot this supper time!

Today has been so crazy, a day up in town in a gorgeous but old building which meant it was roasting with no real window usage due to them being SO old, completing first aid training!

Bonus we got to have lunch in the garden and got away half an hour early, in that weather it was a sin to stay in!!

Beef and Tomato Stew

This recipe is one of my favourites, so easy to do and Slimming World friendly, I like to serve mine with wild rice, but you can also serve it with potatoes, mashed or jacket.

Ingredients

*500g beef chunks (I use stewing steak)

*1- 2 tbsp tomato puree

* 1tsp sugar/sweetener

*3-4 cloves of garlic

*1 pint of beef stock (this can come from a stock cube)

* 2 peppers chopped

*mushrooms (as many as you like)

*1 large onion

*salt and pepper

Method

*First off preheat your oven to 160oC

1 – In a large pot brown and seal the meat.

2 – Add in everything else, it doesn’t matter what order

3 – Mix together and transfer to an ovenproof casserole dish

4 – Cover the casserole dish with tinfoil and cook for 2 and a half – 3hours until the meat is tender and falling apart
