Highlight of my day

This was the highlight of my day! It’s hard sometimes not to get caught up with the negatives or difficulties in work, even when you know you are trying your best and know your making a difference.  So today to review the progress of my kids and how far they have come melted my heart,  I am so, so proud of them! They are all like my babies and all I want is the best for them.  

I’m not a qualified teacher but I teach a small group of children as part of my job and have been (unoffically) been teaching for years.  It’s funny when you know you can do it because it reflects in the children and their work, the feedback from parents and other educators.  Yet universities look at paper, as far back as your GCSE’s and say you can’t do it and you aren’t up to it.  So for those of you who that is, don’t worry about it, with experience and opportunities you will find your dream job and you can still teach!

Anyway the quotes above are from one of our volunteers (a retired teacher) I didn’t ask for any feedback on myself but she made sure to tell me!  Makes my job even more worthwhile cos yeah I am a good teacher and I’ll hold up my hands and say that (even if it does make me cringe a little!)

So hold on to your dreams, make the dreams of little people possible by building them up to help them be the person they see in their dream!

The weekend is just an arms length away

I love it when I get to Wednesday night! It’s my mid week post to past, once Wednesday has been and gone that means it’s only 2 days until the weekend and boy I can’t wait!  So busy at work I’ve not had the chance to do a proper blog like I’d intended and haven’t even had a chance to reply to my emails.  It’s so hard juggling what is nearly full time hours in work, life and blogging.   Roll on the weekend when I’ll hopefully have a bit of me time and get a chance to write up my blog posts and reply to people!

The weekend countdown is on!!! 😆

Mmm meatballs

Dinner tonight was quick and easy Meatballs with Homemade tomato sauce I defrosted from the freezer (the joy of batch cooking). Really tasty and syn free dinner hit the spot!

Pampered and relaxed!

I had a lovely weekend chilling out with my bestie! For now I will just show you some teaser pictures because I’m being so lazy and relaxed this weekend I just want to chill out. But I promise I will tell all over the next couple of days!

Crazy Day!

So today started off mega early and was very long travelling to Lisburn for training! Rush hour traffic, snow, having no idea where I was actually going (thank god for sat nav!) and then broken down cars causing tail backs!!! Ah what could be a 45 minute journey took 2, yes 2 hours!!!!

All worth it though for my facilitator training for the Incredible Years Baby Programme.  I’m a bit of a geek and love training,  meeting new people and learning more to improve my skills and my job! We had an amazing teacher today too, from Seattle and 110% knows her stuff and an amazing teacher.  I can’t wait to go back again tomorrow!

Pretty mental day and one sore butt for sitting wayyy too long today but totally worth it even if I was nearly blown away!

Fingers crossed more stickers tomorrow! Lol

Sticky Chicken

Tried and fell in love with slimming world sticky chicken! Cooked it with peppers and then had it with veggie packed egg fried rice and salad! 2 syns for the chicken and the rest all syn free! #slimmingworld #sw #extraeasy #healthyeating

I came across this fab recipe on instagram, one of the Slimming World girls posted it and it looked delicious, so I thought I’d give it a go.  On Extra Easy it’s 2 syns per serving and would work out at 40 calories per serving for the Sticky Sauce.

STICKY CHICKEN

To make the sticky chicken mix 3 tablespoons of balsamic vinegar, 3 tablespoons of soy sauce and 3 tablespoons of honey in a bowl.  Cut up your raw chicken breasts and add to the bowl, stir the chicken around and make sure all the chicken pieces are coated.  Leave to marinate for 30 minutes.

Once the chicken has been marinated for 30 minutes pour into a heated frying pan, at this stage I also added chopped peppers.  Cook on a high heat for 20 minutes until all the sauce has absorbed into the chicken and become sticky, make sure to stir regularly to stop the sauce from sticking to the pan and burning.  Once the chicken is thoroughly cooked serve immediately.

EGG FRIED RICE

To make the egg fried rice you will need; boiled rice (I used both brown and white), a handful of chopped spring onions, sliced peppers, sliced mushrooms, frozen peas, garlic, soy sauce and 2 eggs.

Firstly boil your rice until cooked and then drain.  In a frying pan add some Fry light and fry together the peppers, mushrooms and garlic for a few minutes. Add the frozen peas and spring onions and cook until everything is cooked through.  While they are cooking whisk up 2 eggs (just in a cup with a fork) and season with salt and pepper.  Remove the vegetables from the pan and add your drained rice into your now empty frying pan.  Add soy sauce ( I usually go for a couple of shakes but add a little and taste, you can always add more) and your beaten egg.  Stir the egg through all your rice and this will cook as you do it, then add the vegetables back into the pan with the rice, mix together and when piping hot, serve.

The Egg Fried Rice is really filling and all syn free, you can add what ever vegetables etc you want.  I served this meal with a side of salad.  I’ll definitely be having it again and maybe try it with pork or ribs, really yummy!!!

P.S. when it comes to the Sticky Chicken don’t be put off at the start by the strong vinegar smell, that completely disappears smell and taste wise when it is all cooked off and the sauce is sticky.
