Sticky Chicken

I came across this fab recipe on instagram, one of the Slimming World girls posted it and it looked delicious, so I thought I’d give it a go.  On Extra Easy it’s 2 syns per serving and would work out at 40 calories per serving for the Sticky Sauce.

STICKY CHICKEN

To make the sticky chicken mix 3 tablespoons of balsamic vinegar, 3 tablespoons of soy sauce and 3 tablespoons of honey in a bowl.  Cut up your raw chicken breasts and add to the bowl, stir the chicken around and make sure all the chicken pieces are coated.  Leave to marinate for 30 minutes.

Once the chicken has been marinated for 30 minutes pour into a heated frying pan, at this stage I also added chopped peppers.  Cook on a high heat for 20 minutes until all the sauce has absorbed into the chicken and become sticky, make sure to stir regularly to stop the sauce from sticking to the pan and burning.  Once the chicken is thoroughly cooked serve immediately.

EGG FRIED RICE

To make the egg fried rice you will need; boiled rice (I used both brown and white), a handful of chopped spring onions, sliced peppers, sliced mushrooms, frozen peas, garlic, soy sauce and 2 eggs.

Firstly boil your rice until cooked and then drain.  In a frying pan add some Fry light and fry together the peppers, mushrooms and garlic for a few minutes. Add the frozen peas and spring onions and cook until everything is cooked through.  While they are cooking whisk up 2 eggs (just in a cup with a fork) and season with salt and pepper.  Remove the vegetables from the pan and add your drained rice into your now empty frying pan.  Add soy sauce ( I usually go for a couple of shakes but add a little and taste, you can always add more) and your beaten egg.  Stir the egg through all your rice and this will cook as you do it, then add the vegetables back into the pan with the rice, mix together and when piping hot, serve.

The Egg Fried Rice is really filling and all syn free, you can add what ever vegetables etc you want.  I served this meal with a side of salad.  I’ll definitely be having it again and maybe try it with pork or ribs, really yummy!!!

P.S. when it comes to the Sticky Chicken don’t be put off at the start by the strong vinegar smell, that completely disappears smell and taste wise when it is all cooked off and the sauce is sticky.
