Living by today’s mantra

It’s Sunday and I’ve nothing at all planned for today! The day is mine to either laze about the house and do nothing, potter about and do the odd little thing or go out and be busy. However I’m opting for a mix of the above, I think I’ll try and get a couple of blogs up if WordPress will play ball, I’m going to bake some cookies to bring to my friends bbq tomorrow, heading out for a girlie date with my best friend tonight and maybe I’ll fit in a wee film.

Are you quizzing me?

So it’s the summer hols and alongside eating healthy and exercising I’m spending loads of time with my besties and getting out and about!

We headed to our favourite bar in Belfast Horiato Todds for their monthly pub quiz. Last time I can’t remember where we ranked but we did win top prize in the raffle!!!! So we had high hopes.

As always I gotta show you what I wore. I spotted this at the weekend and thought I’d give it a go and oooh I loved it and for once in quite a while I felt happy and confident wearing it so I was dying to get out in it!!!

And my necklace was a wee cheapy from Primark alongside brown chunky heeled sandals. . . Oops I forgot to get a picture of those.

I teamed it up with my ‘Inspector Gadget’ coat I got years ago from Dunnes. . . Yes I know it’s July, but I do live in Northern Ireland and it always rains!

We opted for rose wine 🍷 I love white zinfandel. . . It’s literally the only wine I will drink and I like ever!!! And of course cocktails, and what’s better they are only £4.25 during the 2 hours of the quiz. Also the food above, we got free, yup it comes with the quiz. . . Wooo hoo!!!

After all the amazingness and me surprising myself with ‘how did I actually know that?!?’ Plus realising how many songs from the 80’s I know. . . Oh, oh, oh and our totes amazeballs 3d boat… . 

We only came third!!!!!! Beaten by the old men after all that stress. . . Boo, mind you it was sooo much fun!!!

⚓ Ahoy there! ⚓

This weekend the Tall Ships where in the city.  Planning on going down on both Saturday and Sunday, it ended up just being Saturday night.  That’s my excuse for the lack of photos, but hey there’s always next year. The time I did spend down by the waters edge was great. There was a fantastic atmosphere and I was out with one of my best friends!

As you can see from the pictures the weather wasn’t the best but it was still warm and luckily it stayed dry. After having a look at a few of the boats we decided we had to get ourselves a sailors hat.

We also picked ourselves up these cute little dream catcher bracelets.

There were so many stalls we wanted to look around and the rest of the boats, it really was a fantastic and lively atmosphere but it was just so busy with people we decided to get a drink and come back.

There were a few beer tents there, all of course packed and then from a far we spotted the tent from our favourite local bar Horiato Todds and well the going back didn’t happen.

Oh and I forgot to show you my outfit for the night.  I literally picked it up that afternoon from H & M, a maxi dress perfect for the summer that was cool, comfortable and really flattering. I completely love it and felt great wearing it, I accessoried it with a pair of brown sandals from Primark, earrings I’ve had for years and my new bag from Zara.

Our plans for also going back to the stalls, ships and to see the fireworks didn’t really happen, because all of a sudden it was after ten, the tents and stalls were closing and the fireworks had started.

This is the only picture we ended up getting. We did however go into one of our favourite clubs and had a great night!!

The next day we were suffering a tad, so we went for an amazing feed in Maggie Mays in Belfast!!!

We couldn’t finish it all but oh my word it was delicious and a total bargain at only £23 for the two of us.

Easy peasy nice cream

Over the last week in this warm weather I’ve been making ‘fake ice-cream’ using only fruit, apparently in the healthy eating world that I’m late to come to it’s actually called nice cream.  As an added bonus to it being healthy, tasty and low calorie it’s actually really quick and easy to make.

Here are some I made earlier –

Banana, strawberry and raspberry

I like to eat mine for breakfast, a different way to eat fruit.  Great for the kids and the rest of the family to encourage them to eat more fruit.

– Any mixer will do, I have a small hand held one
– You can freeze your banana if you want, but you don’t always need to if you’re using other frozen fruit (wee tip, if you freeze your banana peel it first or like me you’ll have to take the skin off with a vegetable peeler)
– To get the sorbet/ice-cream effect you need to have frozen fruit, not just the one banana (pick whatever you fancy, I like frozen raspberries)
– I like to add a fresh fruit to my nice cream, just to help it to blend, if you don’t have any you can use fruit juice

SO HERE’S HOW I DO IT. . .

Put your fruit in the blender, today I started with a frozen banana and fresh strawberries from my garden

And whizz it up until there are no lumps.  At this point mine was a little too liquidy (too many fresh strawberries), I then added my frozen raspberries

Unfortunately adding the raspberries this time didn’t make much of a difference and it would be too smoothy like to eat as nice cream

So I poured it into a plastic tub to go into the freezer to set

I had some strawberries left over so I sliced them and added them on the top before they went into the freezer.

An hour later I take it out of the freezer, all ready to eat.

Wah-la really tastey and the texture of sorbet, it melts quite quickly in this heat, it won’t be solid.  You have your nice cream, as easy as that!
