
The burrito is actually a Lean in 15 recipe by The Body Coach
INGREDIENTS
°½ tbsp coconut oil
°sirloin steak, sliced into 1cm thick strips
°5 spring onions, finely sliced
°2 tsp jerk seasoning
°100g pre-cooked rice
°40g tinned kidney beans, drained and rinsed
°2 tbsp chopped coriander
°75g pineapple, chopped into 1cm pieces
°1 red chilli, finely sliced
°1 lime
°2 tortilla wraps
METHOD
1. Fry off the steak strips in coconut oil until browned, add the jerk seasoning and spring onions and mix through.
2. Crumble in your precooked rice and kidney beans with 2tbsp of water. It will bubble up but this will heat through the rice and beans.
3. In the meantime make your salsa with the pineapple, chilli, coriander, juice of ½ lime and salt and pepper.
4. Heat through your tortillas for 5-10secs in the microwave and build your burritos. I’m a wimp with spice and the hubby likes it hot, so I just add some Greek yogurt to mine.
For the CHILLI POTATOES; cube potatoes and boil for 10 mins (until they start to soften) drain, coat with a little oil or frylight and cook until golden and crispy. Remove from oven and add 2 tbsp of sweet chilli sauce, stir to coat all the potatoes and cook for a further 5 mins.
